Molten Chocolate Cake Recipe


  • 4 ounces (115g) high-quality dark chocolate (70% cocoa or higher)
  • 1/2 cup (1 stick or 113g) unsalted butter
  • 1/4 cup (30g) all-purpose flour
  • 1/2 cup (60g) powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 teaspoon pure vanilla extract
  • Pinch of salt
  • Cooking spray or butter, for greasing

Optional Garnishes:

  • Powdered sugar for dusting
  • Fresh berries
  • Whipped cream
  • Vanilla ice cream


  1. Preheat your oven to 425°F (220°C). Place the oven rack in the lower third of the oven. Grease four 6-ounce ramekins or custard cups with cooking spray or butter.
  2. In a microwave-safe bowl, melt the dark chocolate and unsalted butter together. You can microwave in 20-30 second intervals, stirring each time until smooth. Alternatively, you can melt them together using a double boiler on the stove.
  3. In a separate bowl, sift together the all-purpose flour and powdered sugar.
  4. In another bowl, whisk the eggs, egg yolks, pure vanilla extract, and a pinch of salt until well combined.
  5. Slowly add the melted chocolate and butter mixture to the egg mixture, stirring constantly until smooth.
  6. Gently fold the flour and powdered sugar mixture into the chocolate mixture until no streaks remain, being careful not to overmix.
  7. Divide the batter evenly among the prepared ramekins or custard cups.
  8. Place the ramekins on a baking sheet and bake in the preheated oven for 12-15 minutes. The cakes are done when the edges are set, but the center is still slightly soft.
  9. Remove the molten chocolate cakes from the oven and let them cool for a minute.
  10. Carefully run a knife around the edge of each cake to loosen it, then invert the cakes onto serving plates.
  11. Dust with powdered sugar and garnish with fresh berries, whipped cream, or vanilla ice cream if desired.
  12. Serve immediately, and enjoy the warm, gooey center of your homemade Molten Chocolate Cakes!

Note: Be cautious when unmolding the cakes, as the center will be hot and can flow out when cut.
