Chop Suey Recipe

Ingredients:

For the Sauce:

  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 1 cup chicken or vegetable broth
  • 1 teaspoon sugar

For the Stir-Fry:

  • 2 tablespoons vegetable oil
  • 1 pound boneless chicken breasts or tofu, cut into bite-sized pieces
  • 2 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 cup mushrooms, sliced
  • 1 cup snow peas or snap peas, trimmed
  • 1 cup bean sprouts
  • 1 cup bamboo shoots, sliced (optional)
  • 2 cups cooked white rice or noodles
  • Green onions, sliced (for garnish)
  • Sesame seeds (for garnish, optional)

Directions:

  1. In a small bowl, whisk together the soy sauce, oyster sauce, cornstarch, chicken or vegetable broth, and sugar. Set the sauce aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the chicken or tofu pieces and stir-fry until they are cooked through and browned. Remove them from the skillet and set aside.
  4. In the same skillet, add the remaining 1 tablespoon of vegetable oil.
  5. Add the minced garlic and sliced onion. Stir-fry for about 1-2 minutes until the onion becomes translucent.
  6. Add the bell pepper, mushrooms, snow peas, and bamboo shoots (if using). Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
  7. Return the cooked chicken or tofu to the skillet.
  8. Pour the prepared sauce over the chicken and vegetables. Stir well and let it simmer for 2-3 minutes, or until the sauce thickens.
  9. Add the bean sprouts and stir-fry for an additional 1-2 minutes until they are heated through.
  10. Serve the chop suey hot over cooked white rice or noodles.
  11. Garnish with sliced green onions and sesame seeds if desired.
