Ingredients:
For the Sauce:
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon cornstarch
- 1 cup chicken or vegetable broth
- 1 teaspoon sugar
For the Stir-Fry:
- 2 tablespoons vegetable oil
- 1 pound boneless chicken breasts or tofu, cut into bite-sized pieces
- 2 cloves garlic, minced
- 1 small onion, thinly sliced
- 1 bell pepper, thinly sliced
- 1 cup mushrooms, sliced
- 1 cup snow peas or snap peas, trimmed
- 1 cup bean sprouts
- 1 cup bamboo shoots, sliced (optional)
- 2 cups cooked white rice or noodles
- Green onions, sliced (for garnish)
- Sesame seeds (for garnish, optional)
Directions:
- In a small bowl, whisk together the soy sauce, oyster sauce, cornstarch, chicken or vegetable broth, and sugar. Set the sauce aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the chicken or tofu pieces and stir-fry until they are cooked through and browned. Remove them from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of vegetable oil.
- Add the minced garlic and sliced onion. Stir-fry for about 1-2 minutes until the onion becomes translucent.
- Add the bell pepper, mushrooms, snow peas, and bamboo shoots (if using). Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
- Return the cooked chicken or tofu to the skillet.
- Pour the prepared sauce over the chicken and vegetables. Stir well and let it simmer for 2-3 minutes, or until the sauce thickens.
- Add the bean sprouts and stir-fry for an additional 1-2 minutes until they are heated through.
- Serve the chop suey hot over cooked white rice or noodles.
- Garnish with sliced green onions and sesame seeds if desired.
